Wheat bread

A few weeks ago at our ward auction I purchased a wheat bread lesson from a lady in my ward. Here is what I learned

One of the things I learned is that you cover the bread for the first raise and then don't cover it for the second raise. I always covered it both times. We also raised it in the oven on warm for 20 minutes instead of on the counter for an hour, that worked really good. The recipe she gave me she adds oats to, she said it helps with the moisture, I didn't even notice the oats in the bread. Usually when I make wheat bread my kids won't even touch it, but they actually at this. But they did like it a lot better the first day after that it wasn't as good.
Here is the Recipe
3 C Warm water
2 Tbsp yeast
2 tsp salt
1/3 C Honey or sugar
1/3 c oil
Flax and oats (1/3-1/2 C each) optional
3-4 C wheat flour
white flour as needed
Add all ingredients as listed
Add flour and mix until a "shaggy mass" (don't over mix)
Kneed about 5 min adding the white flour to make smooth
Cover and place in oven on warm to raise aprox 20 min
Seperate two loaves into greased pans and put back in oven to raise 2nd time uncovered
When almost double turn oven up to 350 and bake 35 min
